Blue coconut balls - colorful, fun, and kid-friendly
Creamy coconut yogurt, fine white chocolate, and our Magic Blue Spirulina come together to create sweet little balls that are sure to put a smile on everyone's face, both young and old.
Ingredients for approx. 6–8 balls
For the balls
• 2 tsp Yacon powder
• ½ tsp Sunflower lecithin powder
• 1–2 tsp Magic Blue Spirulina or Blue Spirulina
• 5 tbsp coconut yogurt (unsweetened)
• 3 tbsp Coconut flour
• 3 tbsp Desiccated coconut
For the coating (white chocolate)
• 2 tbsp Yacon powder
• 3 tbsp Cocoa butter
• 3 tbsp coconut milk powder
For the blue sprinkles
• 1 tsp Magic Blue Spirulina
• 3 tbsp Desiccated coconut
For decoration (optional)
• Candy eyes or small coconut chips
Preparation

Prepare the balls
Mix all ingredients for the balls until a smooth dough is formed, then shape into small balls. Place in the refrigerator to set. -
Make the white chocolate
Melt the cocoa butter over a water bath. Stir in the coconut milk powder and yacon powder until a creamy glaze forms. -
Prepare the sprinkles
Mix the Magic Blue Spirulina with the desiccated coconut. -
Coat the balls
Dip the chilled balls into the white chocolate first, then roll them in the blue coconut mixture. -
Decorate
Decorate with candy eyes as desired to create fun, little blue monsters.
Tip: These balls are perfect for children's birthday parties, gatherings, or simply as a colorful snack in between. They stay fresh in the refrigerator for a few days.
