Monster Raw Cake
A creamy, fresh raw cake with lime, avocado, and chlorella – no baking required. Cut into small pieces and decorated as a Frankenstein monster for Halloween – a real eye-catcher and a healthy treat!
Ingredients
For the floor
- 105 g of nuts of your choice (e.g. almonds, cashews or hazelnuts)
- 50 g date paste
- 1/8 TL vanilla powder
- 1 pinch of salt
- A little water (optional, for better binding)
For the filling
- 100 ml lime juice (freshly squeezed)
- 60 ml agave syrup
- 40 ml coconut milk
- 80 g avocado flesh (ripe)
- 150 g Coconut oil , melted and cooled
- 100 g Cocoa butter , melted and cooled
- 1–2 tsp Chlorella powder
- ½ tsp vanilla powder
- 1 pinch of salt
preparation
- Floor: Finely grind all the ingredients for the base in a food processor. Add a little water as needed until a smooth, easily moldable dough forms. Press into a small baking dish lined with cling film, smooth with the back of a tablespoon, and form a small rim.
- Filling: Blend all ingredients in a mixer until smooth and creamy. Spread the cream evenly over the base.
- Cool: Refrigerate the cake for about 5 hours (or overnight) until firm.
- Decorate (optional): Cut into small pieces and decorate as a Frankenstein monster, e.g. with coconut cream, dark chocolate and small pieces of fruit for eyes and mouth.
