Pumpkin Energy Balls
These little energy balls are crunchy on the outside and melt-in-your-mouth tender on the inside – with the warm aroma of pumpkin, cinnamon and vanilla and an orange chocolate coating thanks to our PureRaw Phoenix Magic .
A healthy treat that not only looks great but also provides plenty of nutrients.
Ingredients
For the balls
- 150 g ground almonds
- 70 g pumpkin puree (e.g. Hokkaido, cooked and pureed)
- 40 ml Yacon syrup
- 40 g Cocoa butter , melted
- 2 tsp PureRaw Phoenix Magic
- 1 tsp vanilla powder or the pulp of a vanilla bean
- ½ tsp Cinnamon

For the coat
- 40 g cocoa butter
- 20 g coconut milk powder
- 1 tbsp Yacon powder (or according to taste)
- 2 tsp PureRaw Phoenix Magic

- Cocoa nibs (as small stems)
- melted chocolate (for eyes & mouth)
preparation
- To make pumpkin pulp: Combine all the ingredients for the balls in a bowl until a malleable, slightly sticky dough forms. If it's too soft, add some ground almonds; if too firm, add a teaspoon of pumpkin puree.
- Forms: Form small balls with your hands, flatten them slightly, and use a toothpick or wooden skewer to create small grooves on the top of each one, resembling a pumpkin. Then chill for at least 30 minutes.
- Chocolate coating: Melt cocoa butter in a water bath, stir in coconut milk powder, yacon powder and Phoenix Magic until a smooth, creamy chocolate is formed.
- Coating: Dip the chilled balls into the orange chocolate, let them drip dry, and allow them to harden on baking paper.
- Decorate: Use cacao nibs to make small pumpkin stems. Then, use melted chocolate to paint on eyes and mouths – and your sweet mini pumpkins are ready!
Tip: The energy balls will keep in the refrigerator for about a week. Perfect as a healthy snack or a cute Halloween gift!
