Description
White Irish Moss, also known as Chondrus crispus or one of the carrageenan algae, is a sea alga that is much softer and milder in taste compared to its red variant, making it particularly sought after.
Our white Irish Moss is wild-harvested and of the best raw food quality.
Drifted Chondrus crispus has long been gathered as a food source in Ireland and Scotland. However, Irish Moss is also very beneficial for the skin, for example, in cases of sunburn, thanks to its moisturizing effect.
Today, Irish Moss is primarily cultivated for the extraction of carrageenan, a polysaccharide that is a popular gelling and thickening agent for all kinds of dishes - not just in raw vegan cuisine. From delicious dessert creams, to ice cream, cakes, and tasty sauces. Irish Moss is the perfect "kitchen helper" when it comes to binding or thickening dishes.
Iodine and Consumption Recommendation
Average iodine content: 11.23 mg/kg
Approx. 13 g of dried Irish Moss corresponds to 100% of the reference intake for daily iodine intake of 150 µg (EU nutrient reference value).
Sea algae are naturally rich in iodine. Excessive iodine intake can lead to thyroid dysfunction. Therefore, it is recommended to rehydrate the sea algae before consumption (according to instructions)* to reduce the iodine content.
* Hydration: Rinse the algae thoroughly and then soak in clear water for 1-3 hours. Afterwards, rinse again thoroughly.
Ingredients: Irish Moss (Carrageenan, white)
Origin: Vietnam
Storage: Protect from heat, light, and moisture. Please do not store the dried product in the refrigerator.
Usage: To prepare a cream, approx. ¼ cup of Irish Moss is thoroughly blended with 1 cup of water in a high-speed blender. The cream thus created can then be further processed, for example, in cakes, sauces, desserts, and ice creams.
The freshly prepared algae gel can be stored in a sealed airtight container in the refrigerator for up to 1 week.
Our experience has shown that a very good yogurt texture can be achieved with Irish Moss. To do this, thoroughly clean and soak approx. 20 g of Irish Moss and blend it with the desired "plant-based drinks." Then sweeten as desired, e.g., with dates, yacon syrup, or birch sugar, and stir in the yogurt ferment. Then proceed as described in the yogurt recipe.

Important notes:
- This is a natural product, the composition of which is subject to natural fluctuations.
- During drying, white deposits may appear on the sea algae. This is natural salt inherent to the algae. This is not a quality defect.
- Wild harvested. Despite careful processing, natural materials of marine origin may be present.
- May contain traces of tree nuts, mollusks, crustaceans, and marine fish.
