Hericium erinaceus, also known as "lion's mane mushroom" or "monkey head mushroom" due to its appearance, is also native to German forests. It prefers to grow on older deciduous trees, mostly oaks and beeches. Its fruiting body is white to cream-colored and can reach sizes of up to 30 cm, while the top of this mushroom is fibrously torn open. On the underside are the soft, densely packed spines that visually resemble the spines of a hedgehog.

In addition to its great importance in Traditional Chinese Medicine, it is considered a true delicacy among edible mushrooms with its more than 30 different aromas. Fine citrus notes and coconut-like nuances make this mushroom something very special.
