Kombu (Laminaria ochroleuca) sind Braunalgen die weltweit in klaren, kalten Gewässern vorkommen. Sie wachsen unter kontrolliert biologischen Bedingungen und werden schonend getrocknet, wodurch die wertvollen Inhaltsstoffe bestmöglich erhalten bleiben. Die Kombu-Alge enthält von Natur aus viel Glutaminsäure (Umami-Geschmack) und wird deshalb in der traditionellen japanische Küche als natürlicher Geschmacksverstärker eingesetzt.
