The tiger nut, also known as "chufa", is a plant species of the genus Cyperus in the sedge family (Cyperaceae). The perennial herbaceous plant can reach heights of up to 60 cm and bears white flowers.
The tiger nut is the tuber of the yellow nutsedge and has been used and valued for centuries in large parts of Africa. These brown, pea-sized tubers are known in France as "amandes de terre" and in Spain as "chufa".
They are gluten-free and a tasty alternative for allergy sufferers. They also have a high fiber content (13.9 g/100 g)* and are naturally pleasantly sweet. In short, the tuber tastes like a mixture of hazelnut and almond.
The skin of the tiger nuts is removed using a mechanical process. The remaining tiger nut therefore has an uneven surface. However, peeled tiger nuts are much softer than unpeeled tiger nuts and are pleasant to eat.
