Carob is the term for the pulp of the brown pods (legumes) that grow on the carob tree in the Mediterranean region. These pods have been used for human nutrition there since biblical times. To produce carob powder, the ripe fruits are cleaned, dried, and then gently processed into powder under controlled conditions.
